Summer Lovin'

I realized a funny thing the other day. While scrolling through my pictures from the last few months, I noticed a very distinct trend from January to March. Sure there were lots of belly shots, nursery reveals, and shower photos, but practically every other photo had one common denominator...FOOD! I must have taken a hundred pictures of different meals I made :)

It made me laugh to see how plates of food I photographed, not to mention staged ingredients. You can tell what was on my mind during that portion of my pregnancy! I guess it's not surprising to discover that I also happened to pack on most of pregnancy weight during those same months. I think I temporarily lost my mind and thought the Food Network might be looking for new talent or something :)

Anyway, in honor of all those recipe posts, I am back with another INCREDIBLE meal for you to try! This time I have a main dish and an appetizer for you to try. It got such rave reviews at my house, we will definitely by having both of these on a regular basis. I know Ava gets most of the screen time on here, but don't say I never throw my loyal readers a bone here and there! If you're looking for a new recipe to lift you out of your summer rut, here you go! Enjoy!!

Judy's Fruit Salsa and Homemade Cinnamon Chips
Ingredients:
4 Flour Tortillas (6-8")
1/4 C sugar
1 t. cinnamon
olive oil or regular oil

Fruit Salsa-
1 C diced strawberries
1 banana, diced
1 kiwi, peeled and diced
1 apple, cored and diced
2 T. lemon juice
1/4 C honey
1/4 t. nutmeg
1/2 t. cinnamon

Preparation:
-Preheat oven to 350
-Brush tortillas with oil and sprinkle with cinnamon and sugar
-Cut tortillas into strips, about the size of chips
-Bake for 7-10 minutes
or
-Fry tortillas in oil and then lay on paper towels.  Immediately sprinkle cinnamon and sugar on top and break them up for a little for eating.  
-Salsa- mix all ingredients together and eat with the chips!

Let me just tell you how amazing this was!!  I baked the chips and they were so good, especially while they were still warm.  The salsa had a great bite to it and it made quite a bit.  Such a good appetizer to bring somewhere.

Judy's Garlic Lime Chicken
Ingredients:
1/2 C soy sauce
1/4 C lime juice
1 T. worcestershire sauce
1/2 t. ginger
2 garlic cloves
1/2 t. pepper
1/4 C honey
1/2 C chopped green onions

6 chicken breasts or 12 boneless thighs (I used chicken breasts)
2 T. olive oil

Preparation:
-Brown the chicken on both sides in the olive oil.
-Mix the first 8 ingredients and pour over the browned chicken.
-This works well in a crock pot on low for 3-4 hours.
or
-You can bake in a covered pan at 325 for 1.5 hours.

The flavor of this chicken was so intense and so good!!  We served it over white rice and drizzled the sauce over it after we plated it.  If I was entertaining, I would have thrown a little lime zest on the chicken breast for color. I also would have served some kind of lime dessert with the meal.  It was a tasty, tasty dish.  I got both recipes from a cookbook I bought at the camp we just went to.  Remember how good I kept telling you the food was??  Well, this is an example of just how good :) I would love to know if you try it.  I promise you it will exceed your expectations!  Happy Cooking!

Jed told me you and the Bongs picked up that cookbook. I wish I'd known! Maybe we can try more stuff from it next week. :)
