A Few Minutes of Father's Day

We had a little bit of an unconventional Father's Day yesterday, but managed to salvage a few minutes of it together!  Travis was gone for 4 days over the weekend, on a camping trip with Junior High boys, in the boundary waters and due home last night.  As it often goes when you are the person in charge, it took him FOREVER to get home after waiting for parents to pick kids up, cleaning out the bus and returning it.  Ava and I hung in there, but we were dying to see him too, after so many days on our own.   Plus, I made him a huge meal, knowing he would be hungry after so many days of camping and with each hour that passed, I was growing more and more impatient to eat it!  By the time he walked in the door, my roast had been in the crock-pot for 14 hours and Ava was already up an hour and a half past her bedtime.  Not ideal.  However, we all survived and were able to still hang out for a few minutes together before bedtime.

After we put Ava to bed, I made a very late night dessert that I had been dreaming of all day!  Travis  LOVES banana flavored things, especially with chocolate and ice-cream, so I made fried/caramelized bananas to go with homemade sundaes.  So good!!  I am not really a banana flavored girl, I would typically choose anything over banana, but I have to admit, these were delicious!  Maybe you've made them before, but here's what you need:

-1 T. olive oil
-2 T brown sugar
-1 T sugar
-1 T vanilla
-2 bananas, cut in half and sliced lengthwise
-Whipped cream or Powdered sugar
-Vanilla Ice-cream
-Nuts (I used candied almonds)
-Chocolate sauce (I also used caramel-butterscotch sauce)

Heat the oil in the pan, being careful not to burn it.  Rub 1/2 of the brown sugar and sugar over one side of the bananas.  Fry face down in the oil for 2-3 minutes, watching carefully so that they sugar doesn't burn.  Brush the opposite side with the rest of the sugar and add the vanilla to the pan.  Flip bananas over and fry the other side for 2-3 minutes.  
Serve while warm with ice-cream, whipped cream, nuts, chocolate sauce and of course, a cherry on top!  
 
Travis had the caramel-butterscotch version and I had the chocolate version.  
Ridiculously good and probably NOT what you should eat minutes before you go to bed :) 
I think we all slept better with Daddy home again last night!  As much as we love that he gets to go on so many fun trips, we prefer to have him home with us.  

I sat in Church yesterday, very grateful for the Dads in my life.  Thankful to have been raised by a wonderful man, who loves the Lord and each of us with all of his heart.  Even greater is to have married a man who follows in those same footsteps and is now raising my baby in the same way.  I speak from experience, Ava is doubly blessed to have the Daddy she does.  It was a different kind of Father's Day, but we had much to celebrate!  Hope it was a sweet day in your house!

I didn't think I was hungry, but those pictures of that YUMMY dessert totally made my stomach growl! Love the pics of Travis and Ava...happy times:)
